
சிக்கன் தம் பிரியாணி | Dum Biriyani Hyderabadi chicken dum Biriyani We all love biriyani and also family’s favourite Sunday lunch. Especially the Hyderabadi chicken dum biriyani is a very special dish of the Mughal, an aromatic food. Everyone love biriyani and especially dum biriyani but when it comes to cooking most of us keep a step behind because of its making process. I want to share my simple method of making a super good dum biriyani with you all. Let us see how to make it...!!! Ingredients: 3/4 kg chicken ( 6 - 8 pieces ) 3/4 kg basmati rice 5 Tbsp ghee 1 big onion chopped 2 tomatoes chopped 3 green chillies split 1 cup mint and coriander leaves 21/2 Tbsp ginger garlic paste 1 cup curd 3 tsp chilli powder 1 Tbsp biriyani masala 1/2 cup fried onion Biriyani spice mix ( garam masala) Saffron soaked milk salt Biriyani spice mix ( garam masala): 2 inch cinnamon 5-6 cloves 2-3 cardamom 1 tsp cumin -- Shahi jeera A small piece mace ( japatri) Direction: Combine all the ingredients under garam masala, pound it coarsely and keep it aside. In a big deep pan, combine all the ingredients and garam masala powder except saffron soaked milk, mix properly with hand. Marination can be for at least 20 mins is enough. Now heat the same pan and cook until the the raw smell goes off and chicken half done. While cooking the chicken, we prepare the rice. Wash the rice and soak it for 20-30 mins and drain the water. In a large pot add water and bring it to boil. Add cinnamon and few cardamom pods into it for a flavour and later can be discarded. When the water comes to boiling add salt and rice. Cook the rice partially and make sure the rice should be firm and not soften. Now remove using a strainer batch by batch and just spread it over the chicken masala , layer by layer. On top sprinkle some ghee, saffron soaked milk and the mint leaves. Lower the flame to its maximum. Cover the pot with a clean muslin towel and then a lid tightly to hold the steam from escaping. Leave it for 25-30 mins. over very low heat. Open once done, mix it from bottom to top gently.
